Ham in a Crust

Prep Time: 30 min.     Cook Time: 1 hour   Yield/Servings: 6 to 8 servings  
 
Ingredients:
1 (2 to 3 lb.) precooked canned ham
Pastry for 2 pie crusts
1 1/2 cups bread crumbs
1 cup brown sugar
1 1/2 tsps. dry mustard
1 tsp. pepper
2 egg yolks
3 tbsps. half-and-half
 
Instructions:

Roll out crusts, according to package directions. Scrape gelatin off ham. Score ham deeply. Mix bread crumbs, brown sugar, mustard and pepper in bowl and rub into ham. Cover top and sides of ham with pastry, molding to shape of ham. Use leftover pastry to cut into strips and add to top of pastry crust. Mix egg yolks and half-and-half in small bowl and brush pastry with mixture. Bake in 325 degree oven 1 hour. Let stand 10 minutes before carving.

Note: Pastry can be substituted with 2 cans puff pastry or buttermilk biscuits.
