5 pigs' feet 2 bay leaves 1 pinch thyme 1 pinch marjoram 1 small carrot 1 onion 2 cloves | 1 cup bread crumbs 1 egg yolk 1/2 tsp. chopped parsley 1 1/2 tsp. mustard 1/2 tsp. meat sauce Pinch cayenne Butter, melted |
Instructions: Boil pig feet until tender, in boiling water to which bay leaves, thyme, marjoram, carrot, onion, and cloves have been added. Let cool in the liquid, then loosen bone and slip out of each foot. Stuff feet with bread crumbs, yolk, parsley, mustard, meat sauce, and cayenne, mixed into a dressing. Rub feet with melted butter and brown in frying pan. | |
