Salmon Casserole, Broccoli Ring

  Yield/Servings: 6 servings  
 
Ingredients:
Casserole:
1 lb. can salmon
4 tbsp. butter
1/2 tsp. salt
Dash of paprika
3 tbsp. lemon juice
3 tbsp. onion juice
1 tsp. minced parsley
1 cup soft bread crumbs, soaked in
1/2 cup rich milk
2 eggs, beaten slightly
Broccoli Ring:
1 1/2 lbs. broccoli
2 eggs, slightly beaten
1 cup rich milk
3/4 tsp. salt
1/8 tsp. pepper
1 tbsp. butter

Cucumber Sauce:
2 finely chopped cucumbers
2 cups hot , medium white sauce
 
Instructions:

Casserole:
Bone and flake salmon, blend in other ingredients, bake in well-buttered casserole in moderate oven, 350 degrees.

Broccoli Ring:
Boil broccoli until tender, in salted water, drain, chop fine, add remaining ingredients. Pack into well-greased and floured ring mold, set in pan of hot water, bake in moderate oven, 350 degrees, about 35 minutes, until firm. Unmold, fill with Salmon Casserole and serve with Cucumber Sauce.

Cucumber Sauce:
Add cucumbers to hot water. Season.
