Salmon Loaf

  Yield/Servings: 6 servings  
 
Ingredients:
1 lb. can red salmon
2 cups soft bread crumbs
2 eggs, beaten
1 cup milk
1 onion, minced
1/2 green pepper, chopped
1 tsp. salt
1/4 tsp. pepper
1 tbsp. shortening
1 tbsp. cornmeal
1 tbsp. lemon juice
 
Instructions:

Drain, bone, skin, and flake fish, save the liquor to make sauce form if desired. Mix all ingredients, press into greased shallow mold, bake 40 minutes in moderate oven, 375 degrees.
