Salmon Stuffed Green Peppers

Ingredients:
1 cup medium white sauce
1 lb. can salmon, flaked
3 tbsp. chili sauce
1 hard-cooked egg, chopped
1/2 tsp. salt
1/8 tsp. pepper
3 large or 6 medium-sized green peppers
Buttered bread crumbs
 
Instructions:

Mix white sauce, salmon, chili sauce, egg and seasonings. Cut large peppers in halves, or remove stem end from smaller ones. Remove seeds and white membrane, parboil 5 minutes. Drain thoroughly, then fill with salmon mixture; top with crumbs. Place peppers in shallow baking dish, add a little water. Bake in moderate oven, 350 degrees, about 30 minutes.
