Baked White Fish Mausset

  Yield/Servings: 6 servings  
 
Ingredients:
3 to 3 1/2 lbs. white fish
1/2 tsp. salt
1/4 tsp. curry powder
1 tbsp. butter
1 tsp. anchovy paste
2 oz. blanched almonds, chopped
1 tbsp. capers
1/2 cup stock
Buttered crumbs
 
Instructions:

Have fish split as for broiling. Take out backbone. Lay fish on greased baking sheet, sprinkle with mixed salt and curry powder. Work butter and anchovy together, spread over fish. Bake in moderate oven, 375 degrees, about 25 minutes, basting frequently with melted butter. Simmer almonds, capers, and stock together for 5 minutes; pour over fish. Sprinkle with buttered crumbs, continue baking until crumbs are crisp. Serve on hot platter garnished with watercress and slices of lemon.
