Blackberry Sherbet

1 cup blackberry juice
1 2/3 cups blackberries
6 tbsp. lemon juice
3/4 cup sugar
1/16 tsp. salt
1 1/3 cups water
2 egg whites

To fruit and juice, add lemon. Combine sugar, salt, and water and bring to rolling boil. Add to fruit mixture; cool.

Freeze until mushy. Remove from freezing unit, add unbeaten egg whites. Beat with rotary or electric mixture until light but not melted.

Return to freezing trays and freeze until done. Serve with whole strawberries or fresh mint.
