Oyster Loaf

  Yield/Servings: 6 servings  
 
Ingredients:
2 cups solid oysters
1 cup mashed potatoes
1 beaten egg
Fine sifted bread crumbs
1 tbsp. lemon juice or vinegar
1 tsp. salt
1/2 tsp. white pepper
2 tbsp. chopped parsley or anchovies
 
Instructions:

Mix oysters, potatoes and egg, add enough crumbs to make mixture stiff enough to form into a loaf. Add seasonings. Wrap the loaf in greased paper, or pack into greased bread pan, bake in moderate oven, 375 degrees, about 45 minutes.
