Oriental Seafood Salad

  Yield/Servings: 4 to 6 servings  
 
Ingredients:
1 cup rice
salt
1/2 lb. shrimp
1/2 lb. crab meat
2 tbsp. olive oil
1/2 cup minced green pepper
1/2 cup cucumbers, finely diced
2 cans pimientos, chopped
1 tbsp. parley, minced
1/4 cup soy sauce
1 tbsp. fresh tarragon, minced, or
1 tsp. dried tarragon
Well-seasoned oil and vinegar dressing, to moisten.
 
Instructions:

Clean, shell, cook and coarsely chop shrimp. Cook rice with salt to taste. Cool. Stir in shrimp and crab meat. Then add oil and mix lightly with fork. Add remaining ingredients and toss.

Note: Fresh crab can be substituted with 1 (61/2-oz.) package frozen crab meat, cooked.
