Apple Spinach Salad

  Yield/Servings: 4 servings  
1 pound spinach, fresh
1 thinly sliced apple
1/2 cup shelled sunflower seeds
4 sliced green onions
2 tbs. lemon juice
3 tbs. olive oil
1/2 tsp. salt
freshly ground pepper

Wash and drain spinach. Coarsely tear into salad bowl. Add apple, sunflower seeds and onions. Blend lemon juice, olive oil and salt; toss with salad. Sprinkle with pepper.
