Cooked Salad Dressing

  Yield/Servings: 2 cups  
3 tbs. cornstarch
1 tbs. sugar
1 tsp. powdered mustard
2 tsp. salt
1/8 tsp. pepper
Dash of cayenne
1/2 tsp. paprika
1 1/4 cups milk
2 eggs yolks
1/4 cup vinegar
1/2 cup salad oil

Mix cornstarch, sugar and seasonings in a small amount of the milk to make a smooth paste. Add remaining milk. Cook over low heat, stirring constantly, until mixture thickens and boils. Boil 2 minutes, stirring constantly. Remove from heat; gradually beat in egg yolks. Cook 2 minutes longer, stirring constantly. Remove from heat and gradually beat in vinegar. Add salad oil; beat until smooth.
