Onion and Cucumber Salad

Yield/Servings: 4 servings

Ingredients:

1 cucumber
1/3 medium onion, thinly sliced
1/2 cup vinegar
4 tsp. sugar
1/4 tsp. salt
1/2 cup water
dash pepper

Instructions:
Pull a fork down cucumber. Slice thinly, as with onion. Combine remaining liquid, pour over vegetables and marinate 1 hour. Drain and arrange on salad greens. Serves 4
