Seven Up Salad

Ingredients:
2 pkgs. (3 oz.) lemon Jell-O
2 cups boiling water
2 cups Seven Up
2 cups (or more) miniature marshmallows
1 - 20 oz. can crushed pineapple, drained ... save juice
Topping:

1/2 cup sugar
2 tbs. flour
1 cup pineapple juice
1 egg, slightly beaten
2 tbs. butter
1 cup whipped cream
 
Instructions:

Dissolve Jell-O in boiling water, add 7-Up. chill until partly set, fold in drained pineapple and marshmallows. Chill till firm. Spread on topping, refrigerate overnight.

Topping:

Combine sugar, flour, pineapple juice, and egg. Cook in double boiler over hot water until mixture thickens. Add butter and cool. Fold in whipped cream. Spread on top of Jell-O. Grated Tillamook cheese may be sprinkled on top if desired. This makes a 13 x 9 inch great tasting salad.
