Andalusian Salad Dressing

Ingredients:

1 small onion, chopped
1 garlic clove, crushed
1 orange peel, grated
1 tbs. minced parsley
10 coarsely chopped almonds
1/2 tsp. cumin or curry powder
1/2 tsp. salt
freshly ground pepper
1/2 cup olive oil
1/4 cup red wine vinegar

Instructions:
Allow to season 30 minutes to 1 hour. Serve over mixed greens.
