Acorn Squash

  Yield/Servings: 2 servings  
1 medium acorn squash
3 tbs. sour cream
1 tbs. butter
1 thin slice onion
Salt and pepper to taste

Heat oven to 350 degree. Halve squash and remove seeds. Bake cut side down in pan containing 1/2 inch water. Remove from oven when tender but not too soft. Scoop out of shell into bowl. Add sour cream, butter, onion and seasonings. Blend until smooth. Mound into shells. Return to pan with 1/2 inch water. Top with slices of your favorite sausage and bake for 5 minutes. Place under broiler and brown.
