6 green peppers 1/2 onion, chopped 1/2 tsp. pepper 1 tbsp. butter 1 tbsp. sugar 1 tsp. dry mustard 1 tsp. paprika 3 tbsp. flour | 1/2 cup tomato puree or catsup 1/4 cup vinegar 3/4 cup water 4 tsp. Worcestershire sauce 1 tsp. tobacco sauce 2 cups ground cooked ham or veal 1 1/2 cups cooked rice Buttered crumbs |
Instructions: Cut pepper in half, lengthwise, and remove seeds. parboil 5 minutes. Cook onion and pepper in butter until onion is clear. Mix next four ingredients; add to onions. Add tomato, vinegar, water, Worcestershire, and tobacco, and cook sauce until thickened. Combine ham, rice, and sauce and put into green pepper halves. Sprinkle with buttered crumbs. Bake in hot oven, 425 degrees, for 30 minutes. | |
