Vinaigrette Carrots

  Yield/Servings: 6 servings  
 
Ingredients:
4 cups carrots (1/2 inch cubes)
3/4 cup brown sugar
1/2 cup vinegar
1 tbsp. shortening
 
Instructions:

Cook carrots until just tender in salted water, drain. Heat sugar, vinegar and shortening to boiling point, add carrots and cook gently about 20 minutes.
