Pineapple Cheese Cake

Ingredients:
1 small can crushed pineapple
1 pkg. lemon Jell-O (3 oz.)
1 - 8 oz. pkg. cream cheese
1/2 cup sugar
2 tsp. vanilla
1 small can evaporated milk
1 tsp. lemon juice
1/4 lb. rolled graham cracker crumbs
1 stick (1/2 cup) butter
1/2 cup powdered sugar
 
Instructions:

Bring crushed pineapple to boil, add package of lemon Jell-O. Set aside to cool and thicken slightly. Cream cheese, sugar, and vanilla together. Add jell-O-pineapple mixture, whip can of evaporated milk until thick with the lemon juice, add cheese, pineapple, Jell-O mixture to whipped milk and blend well.

Melt butter, add sugar and graham cracker crumbs. Line bottom of 9 x 9 pan with 3/4 of crumb mixture. Add cheese mixture and sprinkle rest of crumb mixture on top, chill.
