Oatmeal Cake

Ingredients:
1 cup oatmeal
1 1/2 cups boiling water
1 cube butter
1 cup brown sugar
1 cup white sugar
2 eggs
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. vanilla
1 1/2 cups flour
Frosting:
2 tbs. melted butter
1 cup coconut
1/2 cup brown sugar
1/3 cup evaporated milk
1/2 cup chopped nuts
 
Instructions:

Place oatmeal in boiling water -- let stand until water is absorbed. Cream sugar and butter. Add eggs and vanilla. Add mixture to oatmeal. Add sifted dry ingredients.

Bake at 350 degree, 35-40 minutes.

Frosting:
Mix sugar, butter and milk together until sugar is dissolved. Add coconut and nuts. Spread over top of warm cake and brown under broiler.
