Honey-Orange Topping

  Yield/Servings: topping for 9 inch cake  
1 cup heavy cream
4 strips orange rind (1/2 x 2 inch)
1/3 cup honey

Put cream and orange rind into blender, and whip until thick. Pour in honey, continue to process only until honey is blended with cream.
