Rum Balls

  Yield/Servings: 4 dozen  
 
Ingredients:
2 1/2 cups vanilla wafer crumbs (1/2 lb.)
1 cup pecans
2 tbs. cocoa
1/4 cup light corn syrup
1/4 cup rum
Confectioners' sugar
 
Instructions:

In blender chop vanilla wafers and empty into large bowl. Then in the blender chop nuts. Add to crumbs. Add cocoa, syrup and rum and mix well. Coat hands with confectioners' sugar and roll mixture into balls 1/2 to 3/4 inch in diameter.

Refrigerate for about 1 hour, then roll in confectioners' sugar.
