Caramel-Orange Sauce

  Yield/Servings: 1 1/3 cups  
 
Ingredients:
1/4 cup water
1/4 cup maple syrup
1/4 cup Sherry
1/4 cup orange juice
1/4 cup soft butter
1/4 cup brown sugar
Wedge of lemon
1 tbs. flour
1 1-inch strip orange rind
 
Instructions:

Peel and seed lemon. Put all ingredients into blender and process until blended. Pour into saucepan and simmer 3 minutes.
