Chicken in a Pot

1 3-pound fryer chicken, cut up
2 carrots, sliced
2 onions, salted
2 celery stalks
1 teaspoon salt
1/2 tsp. coarse black pepper
1/2 cup water or chicken broth

Place carrots, onions and celery (stalks with leaves cut in 1 inch pieces) in bottom of crock pot. Cut up chicken and place on top of vegetables. Add salt, pepper and liquid. Sprinkle basil over top.

Cover and cook on low for 8-10 hours. Remove chicken skin and bone, dice meat and add back to vegetables. Stir and serve.
