Holiday Pumpkin Roll

Ingredients:
1 cup nuts

Mixture:
3 eggs, beat for 5 minutes
1 cup sugar
2/3 cup lemon juice
3/4 cup flour
1 tsp. ginger
1/2 tsp. salt
2 tsp. cinnamon
1 tsp. baking powder
1/2 tsp. nutmeg
Filling:
1 1/4 cups powdered sugar
1 tsp. vanilla
4 tbs. butter
8 ounces cream cheese
 
Instructions:

Spray cookie sheet heavily with Pam. Spread mixture on pan and sprinkle 1 cup nuts over mixture. Cook 15 minutes at 375 degree. Loosen edges and set out on kitchen towel sprinkled with powdered sugar. Cool. Spread filling over cake and roll up. Wrap in Saran wrap and refrigerate over night. Serve chilled.
