Zucchini Bread 3

1 cup oil
2 cups sugar
1 tsp. salt
3 tsp. cinnamon
3 eggs, well beaten
2 cups coarsely ground zucchini
1/2 tsp. baking powder
1 cup chopped nuts
3 tsp. vanilla
3 cups flour
1 tsp. soda

Beat eggs till light and fluffy -- gradually add oil; beating as you add. Add sugar and vanilla and blend well. Sift together flour, baking powder, salt, soda, and cinnamon. Blend with creamed mixture. Fold in nuts and zucchini.

Turn into two 9 x 5 inch loaf pans, greased and floured. Bake at 350 degrees for 1 hour.
