White Bread

  Yield/Servings: 3 loaves  
 
Ingredients:
2 cakes compressed yeast
2 cups lukewarm water
11/2 cups milk
3 tbs. sugar
3 1/4 tsp. salt
2 tbs. shortening
10 cups sifted Four
 
Instructions:

Crumble into bowl: 2 cakes of yeast. Add: water, milk (scalded and cooled), sugar, salt, shortening, and flour. Mix until a dough is formed. Turn out on lightly floured board and knead until smooth and elastic. Round up and place in greased bowl. Cover and let rise until double in bulk (about 1 1/2 hours). Knead down, and allow to rise again bout 40 minutes. (This rising may be omitted if desired). Divide dough into thirds. Round up each piece and allow to set, covered, about 10 minutes. Mold into loaves. Place in greased pans, and let rise until doubled. Bake at 425 degree about 40 minutes.
