Basic Sweet Dough

Ingredients:
2 cakes compressed yeast
1/4 cup lukewarm water
1 cup milk, scalded
2 eggs
1 1/2 tsp. salt
1/4 cup sugar
1/4 cup shortening
4 to 4 1/2 cups sifted flour
 
Instructions:

Mix into bowl yeast and water. Scald milk and cool. Then add all ingredients together. Turn out on floured board and knead into smooth, elastic dough. Let rise until double in size (about 1 hour). Punch down and let rest 5 to 10 minutes, covered. Shape into rolls or coffee cakes. Let rise in pan until doubled. Plain rolls may be baked at 425 degree 10-15 minutes. coffee cakes should be baked at 375 degree for 25 minutes.

Note: In yeast dough, instead of scaling the milk, you may use half evaporated milk, and half warm water if you wish.
