4 cups Fisher's medium Rye Flour 2 packages active dry yeast 2 tbs. caraway seeds 2 cups milk | 1/2 cup sugar 2 tbs. shortening 2 eggs 3 cups all-purpose flour |
Instructions: In large mixer bowl combine 3 cups rye flour, yeast and caraway. Heat milk, sugar, shortening and 1 tbs. salt till warm (115 degree-120 degree), stirring constantly to melt shortening. Add to dry mixture; add eggs. Beat al low speed with mixer for 1/2 minute scraping bowl. Beat 3 minutes at high speed. Stir in remaining rye flour and enough all-purpose flour to make a moderately stiff dough. Knead on floured surface till smooth (10 minutes). Shape into ball. | |
