Eggs

To keep whole left over egg yolks from drying out, cover with 1 or 2 tablespoons cold water and store, covered in refrigerator.

Eggs are easier to separate when very cold, but egg whites beat to greater volume if allowed to warm to room temperature.

If, when separating eggs, a bit of yolk get into the egg white, lift out with a piece of eggshell.
