Graham Cracker Cookie
|3/4 cups butter|
2 eggs, beaten slightly
1 cup sugar
1 cup chopped nuts
3 1/2 cups miniature marshmallows
|Melt butter in saucepan. Add eggs and sugar. Stir cooking slowly ... keep stirring until thick. Set aside but keep warm. Crush 30 single graham crackers .. place in bowl. Add chopped nuts and marshmallows ... pour warm sauce over cracker mixture. Mix well. Place in a 9 x 13 inch cake pan and press down. Cut into small squares and roll in powdered sugar.|
Comments: I fixed the graham crackers, nuts, and marshmallows and had the pan ready (buttered) before I melted the butter. Just poured it right over the dry ingredients and then had to pat it into pan with my fingers; without wasting any time. It sets up rapidly and can be cut into squares as soon as it's cool. I dusted some with powdered sugar, but they're good just plain.
This is a great tasting almost candy-like cookie.
