Harlequin Meat Loaf |

Ingredients: |
2 lbs. ground veal 1/2 pound slice ham (cooked) 2 eggs, beaten 2 tsp. salt 1/4 tsp. pepper 4 tbsp. prepared mustard 2 tbsp. minced green pepper | 1/4 cup minced onion 2 cups fine bread crumbs 3 sweet pickles, chopped 1 cup milk or stock 1/4 cup sliced stuffed olives 2 hard cooked eggs |

Instructions: |
Have veal ground twice; cut ham into 1/2 inch cubes. Combine veal, eggs, salt, pepper, mustard, green pepper, onion, pickles, crumbs and milk. Mix well with hands. Stir in ham and olives. Pressed into greased loaf pan. Push one hard cooked egg into each end of loaf.
Bake in hot oven, 425 degrees, for 35 minutes, then reduce heat to 350 degrees and bake 45 minutes more. |
