Broccoli Ring | |

| Ingredients: | |
| 1 1/2 lbs. broccoli 2 eggs, slightly beaten 1 cup rich milk 3/4 tsp. salt 1/8 tsp. pepper 1 tbsp. butter | Cucumber Sauce: 2 finely chopped cucumbers 2 cups hot , medium white sauce |
| Instructions: | |
| Boil broccoli until tender, in salted water, drain, chop fine, add remaining ingredeints. Pack into well-greased and floured ring mold, set in pan of hot water, bake in moderate oven, 350 degrees, about 35 minutes, until firm. Unmold and serve with Cucumber Sauce. Sauce: Add cucumbers to hot white sauce. Season. Comments: Serve with Salmon Casserole | |
