1 1/2 pounds lean shoulder pork 2 tbs. fat 1/4 cup water 2 tbs. corn starch 1/2 tsp. salt 1/4 cup brown sugar
1/4 - 1/3 cup vinegar 1 cup pineapple juice 1 tbs. soy sauce 3/4 cup green pepper, cut into strips 1/45 cup thinly sliced onions 1 #2 can pineapple chunks
Instructions:
Cut pork into strips 2 inch long x 1/2 inch wide and brown in hot fat. Add water, cover. Simmer 1 hour. Combine corn starch, salt, brown sugar, vinegar, pineapple juice and soy sauce. Mix and cook until slightly thick. Stir constantly. Pour over hot pork and let stand at least 10 minutes. Add green pepper, onion, pineapple chunks and let stand 2-3 minutes. Serve over hot rice.
