Place in saucepan over low heat and stir until dissolved: sugar, corn syrup, and boiling water. Mix and cook to soft ball stage. Keep crystals off sides of pan (use fork with wet cloth). Do not stir syrup after sugar has dissolved. When soft ball stage reached, remove from heat. Pour slowly 1/2 of syrup over 2 eggs whites which have been beaten to stiff stage, beating mixture constantly!
Return syrup to stove, cook to crack stage. (Syrup will string from spoon and crack). Add cream of tartar to remaining syrup and mix. Pour over egg white mixture beating constantly until gloss gone. Drop onto wax paper by teaspoonfuls. |
