Zucchini Boats |

Ingredients: |
1 - 4 to 5 pound zucchini 2 lbs. ground beef or venison 1 medium-size can V-8 juice 1 can chunky tomato sauce 1 cup green peppers, diced 1 large onion, diced 6 stalks celery, diced 2 tbs. Italian herbs 2 cups shredded cheddar cheese 2 cups sliced mushrooms 3 cups cooked rice | |

Instructions: |
Saute hamburger, onion, green peppers, celery and mushrooms. Add V-8 juice, tomato sauce and herbs. Cook approximately 20 minutes. Meanwhile, cut zucchini lengthwise and scoop out seeds. Blanch zucchini and let cook 5-10 minutes. Add cooked rice to meat mixture. Heap mixture into hollowed-out zucchini.
Place in oven at 350 degree for 20-25 minutes. During the last 5 minutes, place cheese on top of zucchini and hat until melted. |
