Corn Fritters

Other: Snacks, Vegetable
  Yield/Servings: 12 to 18 fritters  
1 cup sifted flour
1 tsp. baking powder
3/4 tsp. salt
1/8 tsp. paprika
2 eggs, separated
2 cups whole kernel corn, drained
1/2 cup liquid from corn
Fat for frying
Heat fat to 365 degree in deep fat fryer. Sift dry ingredients together. In blender put the egg yolks, 1 cup of the corn and the corn liquid and liquefy until well blended. Add half the dry ingredients and continue to blend. Use a rubber spatula to push ingredients from the sides of blender. Add the remaining dry ingredients and process until well blended. Add remaining corn just before turning off. Beat egg whites with a rotary beater until stiff. Gradually fold in the processed mixture. Drop from tbs. into hot fat and fry until golden brown. Drain on absorbent paper. Serve hot with maple syrup.
