Spanish Codfish Balls |

Ingredients: |
2 cups mashed potatoes 2 cups canned codfish, flaked 1 egg 1 tsp. salt 1 beaten egg 1 tbsp. water Fine bread crumbs | Spanish Sauce: 1 medium onion, chopped 1 clove garlic, chopped 1 green pepper, chopped 3 tbsp. shortening 2 cups canned tomatoes 1 tsp. salt 1 tsp. paprika 21 cup sliced ripe olives 1 tbsp. chili powder Butter |

Instructions: |
Mix potatoes, fish, egg beaten slightly, and salt. Shape into balls. Combine beaten egg and water. Dip balls into crumbs, then into egg and water, and back into crumbs. Fry in hot deep fat, 382 degrees, (browns a bread cube in 40 seconds). Drain on absorbent paper and serve with Spanish Sauce.
Spanish sauce: Fry onion, garlic, and pepper in shortening until light brown. Add tomatoes and other ingredients and blend well. Bring to boil and simmer 10 minutes. |
