Never scrape the pan when making candies such as fudge and penuche. Sugar crystals from sides of the pan can make the whole batch turn grainy.You can make colored sugar by adding a drop or two of food coloring to 1/4 cup sugar, blending well with a fork and drying on wax paper overnight.
