Zucchini Bars

Ingredients:
3/4 cups butter
1/2 cup white sugar
1/2 cup brown sugar
2 eggs
1 tsp. vanilla
1 3/4 cups flour
1/2 tsp. salt
1 1/2 tsp. baking powder
3/4 cup coconut
3/4 cup dates
3/4 cup raisins
3/4 cup nuts
2 cups shredded zucchini (don't peel)
Icing:

2 tbsp. melted butter
2 tbsp. milk
1 tsp. vanilla
1/4 tsp. cinnamon
1 cup powdered sugar
 
 
Instructions:
Beat together until creamy: shortening, white and brown sugar. Add eggs and vanilla. Continue beating. Sift together: flour, salt and baking powder. Add to creamed mixture and beat well. Stir in with spoon: coconut, dates, raisins, nuts and zucchini.

Don't shred zucchini too soon before you are ready to add it to the bars.

Spread mixture in Pam sprayed cookie sheet. Bake at 350 degrees for 35-40 minutes.

Mix well the icing ingredients together and have ready when every cookies are done. Drizzle over warm bars.
