2 tbsp. shortening 2 tsp. minced onion 1 cup cooked, flaked, fish 1 cup cold boiled rice 2 tbsp. grated cheese | 1/2 cup milk 1 egg, slightly beaten Salt and pepper 1 egg, hard cooked |

Instructions: |
Heat shortening and fry onion lightly in it. Add fish, rice, and cheese. Combine milk and egg and add to rice mixture. Season to taste. Garnish bottom of greased casserole with slices of hard cooked egg. Press loaf mixture into dish. Bake 30 minutes at 350 degrees. Turn out onto platter and serve with tomato sauce. |
