Place in bowl: 1 3/4 cups flour, yeast, oil, sugar and salt. Add water and beat for 2 min. Knead dough 2-3 minutes; adding more flour as needed. Place in a greased bowl and let rise 1 hour. Then punch down dough and turn out on board. Divide into 12 pieces, and share into balls. Roll each into 18 inch rope and twist into pretzel. Place on well greased cookie sheet and let rise 2 min.
In a stainless steel pan bring 6 cups of water and 6 tbs. baking soda to simmer. Simmer each pretzel 10 seconds on each side, lift out, drain briefly. Turn over and place on cookie sheet, dry briefly and top with sesame seeds. Let stand uncovered until all pretzels are simmered. Bake in a 425 degree oven until golden, about 12 minutes. Cool on wire racks. Makes 12. |
