Mix oil and sugar. Sift together flour soda, cinnamon, and salt. Add 1/2 flour mixture to oil mixture. Mix well, then beat in carrots, pineapple, nuts, and vanilla. Now add remainder of dry mixture. Beat until well blended. Add eggs one at a time, beat after each addition.
Pour batter into well buttered and floured 10 inch tube pan. Bake 1 1/2 hours at 325 degrees. When done leave in pan for 10 minutes, then remove. Cool thoroughly and Ice with Cream Cheese Icing.
Cream cheese icing: Cream butter and cheese, add sugar and vanilla, cream again, then add nuts. Spread over top and sides of cake. |
