Make thick white sauce of shortening, flour, milk and salt. Cool. Stir in parsley and meat. If mixture is not thick enough to handle, add a few cracker or bread crumbs. Shape as croquettes, dip in fine crumbs, then in beaten egg and water (salted), and crumbs again.
Fry in deep shortening, 385 degree, until golden brown. Drain on absorbent paper. Serve with medium thick white sauce to which capers, peas or pimientos have been added; or with well-seasoned tomato sauce. |
