Bring milk, shortening, and salt to boil. Add flour, stirring vigorously. Cook, stirring constantly, until mixture does not cling to pan sides. Remove from fire and add eggs, one at a time, beating until smooth before next egg is added. Add cheese. Spread in shape of eclairs on cookie sheet, sprinkle with grated cheese. Bake 12-15 minutes at 375 degrees. The outside crust should be soft and the inside creamy. Fill as desired. |
