Giant Nut Popovers

344Muffins
  Yield/Servings: 12 popovers  
Ingredients:
1 cup pecans
6 eggs
2 cups milk
1/3 cup melted butter
2 cups sifted flour
1 tsp. salt
 
 
Instructions:
Heat oven to 375 degree. Grease 12 6-ounce custard cups generously. Arrange in pan. Chop nuts and set aside. Put remaining ingredients into blender and mix until smooth. Use a rubber spatula if necessary to aid in processing. Pour batter into custard cups to within 1/2 inch of top. Sprinkle with 1 tbs. chopped pecans. Bake 60 minutes.

Remove from oven, cut a slit in the side of each to release steam, then return to oven for 10 minutes. Remove at once from custard cups and serve piping hot.

Comment: For higher popovers, heat custard cups before filling.
