Jerry Lewis Italian Chicken

421Chicken/Poultry
  Yield/Servings: 6 - 8 servings  
Ingredients:
1 - 4 lb. roasting chicken
1/4 cup olive oil or shortening
1 cup chopped tomatoes or (16 oz. can)
1/2 cup onion, chopped
1/2 green peppers, chopped
1 garlic clove, minced
2 garlic cloves, whole
2 bay leaves
1 pinch oregano
2 tsp. salt
1/2 tsp. pepper
1 cup uncooked rice
1/4 cup pimentos, chopped
1 cup cooked peas, drained
1 cup rip olives, sliced
 
 
Instructions:
Brown chicken in heavy skillet in 1/4 cup olive oil. Remove and put in a large casserole dish. In skillet, combine tomatoes, onions, green peppers, minced garlic, whole garlic cloves, bay leaves, oregano, salt and pepper. Simmer for 5 minutes. Pour over chicken.
Brown 1 cup uncooked rice in oil. Add to the chicken. Cover with water. Bake in 350 degree oven for 1 1/2 hours or until chicken is tender.

To casserole, add chopped pimentos, cooked peas and sliced ripe olives. Bake for 15 minutes more. Serves 6 to 8.
