Baked Pompano

Ingredients:
1 medium sized pompano
1 cup crabmeat, cooked minced
1/2 cup fine crumbs
1/2 tsp. salt
1 tsp. chopped celery tops
1 tsp. chopped peppers
1 onion, grated
1 cup rich white sauce
 
 
Instructions:
Remove head, fins and tail from fish, split down back as for broiling. Lay fish skin side down on greased baking sheet, spread with filing made by mixing the remaining ingredients.

Brush top of filling with melted butter, cover with oiled paper. Add 1/2 cup milk to the pan, bake fish in hot oven, 425 degrees, half an hour, removing paper last few minutes to brown the stuffing.
