Scale fish; bone and remove head and tail. Rinse in cold water and dry thoroughly. Salt and stuff with any type stuffing desired.
A stuffing made with green peppers and finely chopped onions is very tasty. Tie stuffing in fish and sprinkle with cornmeal.
Heat 2 tablespoons of shortening in fryer and brown fish on both sides. Cover fryer and bake slowly 20-25 minutes one side.
Then turn fish and bake 20-25 minutes on the other side.
When done, remove from pan, dot with small pieces of butter and garnish with finely chopped parsley leaves. Serve with lemon slices.
