Lamb-Mushroom Croquettes |

Ingredients: |
2 tbsp. butter, melted 2 tbsp. flour 1/4 tsp. pepper 1/2 tsp. salt 1/2 cup water or lamb broth | 1/2 cup mushroom liquor 1 cup cold cooked lamb, chopped 1/2 can mushrooms, chopped 1/4 cup cream 1 tsp. lemon juice |

Instructions: |
Make white sauce of the butter, flour, salt and pepper, and liquids (except cream). Add meat and mushrooms, then cream and lemon juice. Cool, shape into croquettes, roll in crumbs and fry in hot deep fat, 375 degree. Drain on absorbent paper after cooking until golden brown. |
