Lamb a la King

  Yield/Servings: 6 servings  
Ingredients:
4 tbsp. lamb fat
4 tbsp. flour
1 3/4 cups lamb broth or gravy
2 cups cubed, cooked lamb
1 tbsp. shortening
12 medium onion, sliced
1/2 cup peas
1 pimiento, chopped
 
 
Instructions:
Make a cream sauce of the lamb fat, flour and gravy. Season to taste. Add lamb and heat gently. Melt shortening and fry onion until lightly browned. Add to lamb. Add peas and pimiento. Serve on pastry or toast points.
